1 reviewVintage: 2021 – a cooler vintage by Margaret River standards resulting in white wines with heightened aromatics and bright natural acids.
Varietals (%’S): 96% Sauvignon Blanc; 3% Semillon; 1% Chardonnay
Appearance: Pale straw with green tints.
Aroma: Passionfruit, kiwi and guava fruits combine with subtle herbal notes of lime leaf, lemon thyme and lavender.
Palate: Textured and mouth-filling, fleshy fruits of pear and guava fill the mid-palate before intertwining with hints of nutty oak spice and flinty complexity. A soft, talc-like mineral acid focuses the finish around notes of cashew, lemon barley, and kaffir lime.
Oak Detail: 33% of the blend spent 6 months (including ferment) in a combination of new and seasoned French oak barriques, whilst the balance of the blend was fermented cool in stainless steel to retain freshness of aromatics.
Cellaring: Ready for immediate drinking and will continue to drink well over the next 3-4 years.
Food Pairing: Will drink well with whole roast chicken seasoned with lemon and herbs.
